Saint-Damase and Mushroom Crisps



INGREDIENTS
4 nice slices of Saint-Damase
4 spring roll dough sheets
1 tray of crimini mushrooms
1 dry shallot, minced
1 bunch of chives, chopped
1 cup of olive oil


Wipe mushrooms and cut into thin slices.

In a skillet, sauté mushrooms in two tablespoons of olive oil with minced shallot.

Cook a few minutes, then add chives, salt and pepper to taste, and remove from heat.

Spread the 4 spring roll dough sheets, coat with oil, and top with sautéed mushroom and a slice of Saint-Damase.

Shape into rolls and close, using a bit of olive oil to seal the flap.

Deep fry rolls until golden, remove with a slotted spoon and drain on roll towels.

Serve warm with salad greens and apple cider vinaigrette.
